With nearly two decades of experience as a dietitian, Veronica has worked in nearly every area of dietetics. Her experience includes helping to develop the room service program for a major hospital, serving as the child nutrition dietitian for a school district, working as a certified diabetes educator, and hosting a nutrition radio segment on a Houston-area radio station for five years.
Veronica earned a Bachelor of Science in Biology from St. Mary’s University in San Antonio, Texas as well as a Bachelor of Science in Human Nutrition and Foods from the University of Houston. Originally from San Antonio, Veronica resides in the Houston-area with her husband, three young sons, dog, and cat.
“I have only been in this position a little over three months and I absolutely love it! Yes, there are daily challenges with juggling the demands of two separate areas of dietetics, but the progress that has been made within both the foodservice and clinical nutrition operations is impressive. There is always room for continued improvement but I definitely see opportunity in every area of HHS. Everyone always tries to find that position that just seems to work for them, and I believe I have found my home within the HHS community.”
