After School Snacks Kids will Love

When the final school bell rings and the kids are headed home, chances are they might want an afternoon snack to tide them over until dinner. These kid-friendly recipes require minimal effort, and use very little dishes for quick and easy cleanup. Whether they crave a creamy dip to go with their favorite veggies, a flatbread with a Mexican flare, or something that satisfies their sweet tooth, there is an option that is sure to hit the spot.

White Bean Avocado Dip

Ingredients:

  • 1 can cannellini beans, drained and rinsed
  • 1 avocado
  • Juice of one lemon
  • 1 garlic clove
  • 1 teaspoon cumin
  • Dash of cayenne (optional)
  • 1 tablespoon olive oil

Directions:
In a food processor, combine all the ingredients and blend until smooth. Serve with chips, carrots, or vegetables of your choice.

Mexican Pita Flatbread

Ingredients:

  • 1 pita bread
  • ¼ cup salsa
  • ½ cup Mexican blend cheese, shredded
  • ½ cup ground beef, browned with taco seasoning
  • 1 tomato, diced
  • 1 cup lettuce, shredded
  • 2 tablespoons guacamole
  • Black olives, to taste

Directions:
On the pita bread, add the salsa, ground beef, and shredded cheese. Place in toaster oven and bake on high for 5 to 10 minutes or until the cheese is melted. Add the lettuce, tomato, black olives, and guacamole and enjoy!

Chunky Monkey Smoothie Bowl

Ingredients:

  • 1 banana, frozen and sliced
  • ½ cup ice
  • ¼ cup old-fashioned rolled oats, uncooked
  • ½ cup vanilla yogurt
  • ½ cup almond milk
  • 2 tablespoons peanut butter
  • 1 ½ tablespoons cocoa powder, unsweetened
  • Ground cinnamon, to taste

Toppings:

  • Banana, sliced
  • Coconut flakes
  • Chocolate granola
  • Peanut butter

Directions:
Add all the ingredients to blender and process until smooth. Pour mixture into a bowl and add desired toppings.
