Coriander-Mint Rubbed Lamb

Ingredients
- 1 ¼ pounds lamb loin chops
- 2 tablespoons Worcestershire sauce
- 2 teaspoons fine sea salt
- 4 tablespoons extra virgin olive oil
- 2 tablespoons ground coriander
- ½ teaspoon lemon zest
- 2 tablespoons fresh garlic, minced
- ½ teaspoon chili powder
Directions
Preheat oven to 375°F. In a medium bowl, prepare the rub by combining lemon zest, coriander, olive oil, chili powder, garlic, and Worcestershire sauce. Mix well to combine all ingredients. Rub mixture liberally around the lamb, ensuring all surfaces are covered. Preheat a large saucepan over medium-high heat. Sear the lamb for 2 to 3 minutes on each side, then finish in the oven for approximately 20 minutes or until it reaches an internal temperature of at least 145°F or your desired level of doneness. Remove from the oven and let stand for 10 minutes, then cut in between each bone to portion out the lamb.
