Soft Pretzel Burger

Ingredients:

1.5 pounds ground beef (85/15)

4 ounces sharp cheddar, cubed

1 egg yolk

1 tablespoon ketchup

2 teaspoons stone ground mustard

2 teaspoons Dijon mustard

¼ cup plain bread crumbs

Couple dashes of worcestershire

Sea salt, to taste

Pepper, to taste

Pretzel bun

Additional toppings as desired

Caramelized Onions

Ingredients:

1 white onion, sliced

1 tablespoon butter

12 ounces light beer, divided

2 teaspoons brown sugar

Sea salt, to taste

Directions:

In a large mixing bowl, combine ground beef, cheddar, egg yolk, ketchup, both mustards, bread crumbs, and worcestershire. Use your hands to mix the ingredients, taking care not to overwork the meat. Once combined, form into six patties. Season both sides of the patties with salt and pepper.

On a high heat grill, grill the patties for about three to four minutes on each side until the patties are brown, slightly charred, and have reached a safe internal temperature.

While the burgers are grilling, add onion slices and butter to a nonstick skillet over medium heat. Allow onions to cook for 1-2 minutes before adding 6 ounces beer and the brown sugar. Continue to saute over medium heat until beer is absorbed, about 10 minutes. Add remaining beer and a pinch of salt and bring to a gentle simmer. Simmer for 3 to 5 minutes, then remove the onions from the pan with tongs to serve.

Top a pretzel bun with a burger patty, caramelized onions, and additional toppings as desired. Serve immediately.
