Directions:
Preheat the oven to 350° F. Lightly grease a 9x9 glass baking dish. In a large mixing bowl, mix together stevia, salt, ginger, and allspice. Whisk in egg and butter, then add potatoes, vanilla extract, and half and half. Blend until smooth. Spread the mixture evenly into the baking dish.
Directions:
Mix stevia, cinnamon, and salt together in a small bowl, then stir in pecans and oats. Mix the dry ingredients well. Add butter and maple syrup and stir.
Crumble streusel topping over the prepared sweet potato filling. Bake for 20 to 25 minutes or until the streusel is toasted. For a special touch, garnish with a small scoop of vanilla bean ice cream and fresh orange zest.
Note: The streusel topping should be crumbly. If needed, add additional butter, one teaspoon at a time, to create the desired texture.
