HHS Chefs Trula Hepner and Victor Mitchell, share three unique vinaigrette dressings that’ll give you the variety you need so that your salads never become boring.
APRICOT AND BROWN SUGAR DRESSING

Ingredients:

¼ cup brown sugar

1 tablespoon lemon juice
-
1 tablespoon garlic, minced

¼ cup apple cider vinegar
-
Sea salt, to taste
-
White pepper, to taste
-
½ teaspoon red pepper flakes
-
½ tablespoon yellow mustard
-
½ cup apricot preserve
-
2 tablespoons yellow onion
-
¼ cup honey
-
½ cup apple cider
-
½ cup extra virgin olive oil
Directions:
In a small food processor or blender, add all of the ingredients except olive oil and blend until well combined. Continue processing, and slowly add the olive oil until well incorporated. Adjust seasonings to your taste.
CITRUS MANGO VINAIGRETTE

Juice of ½ orange

Juice of ½ lemon

Zest of ½ lemon

Juice of ½ lime

1 cup fresh mango, diced

½ teaspoon yellow mustard

1 tablespoon white balsamic vinegar

1 tablespoon champagne vinegar
-
1 tablespoon chardonnay
-
½ tablespoon honey
-
¼ teaspoon fresh thyme leaves

½ tablespoon shallot, peeled and chopped

Pinch sea salt
-
Pinch ground white pepper
-
6 tablespoons extra virgin olive oil

BLUEBERRY BALSAMIC VINAIGRETTE
