From the article, FM 2019 Top 50:
In 2018 HHS’s healthcare division formed a partnership with Joyce Farms, which raises its animals humanely and naturally, without antibiotics or growth stimulants, and allows them to graze the pastures or roam free in barns. It also practices regenerative agriculture, a farming method that relies on nature instead of harsh chemicals or disruptive practices like tilling to build soil health and ensure that animals have access to a variety of healthy vegetation, thus producing healthy and flavorful meat products.
HHS is also currently producing its first ever company cookbook, Food Forward: A Collection of HHS Recipes, featuring recipes from some of its top chefs and designed to accurately represent the food being served in HHS accounts across the country.
In its senior living division, HHS created a new food philosophy to guide its dining partnerships that includes a pledge to use only fresh foods and to source local and sustainable ingredients whenever possible. The standards require HHS teams to always use only fresh vegetables, except corn and peas; make fresh stocks daily; prepare desserts made from scratch; use fresh, not frozen, proteins; hand-inspect all produce; scratch-prepare sauces and gravies; offer house-made dressings; and hand-slice its meats.
